We distill in small batches, by hand, 10 barrels at a time. It’s more work. It yields less whiskey. It demands more patience, but the result is truly stunning. SLOW WATER REDUCED
Most bourbon is proofed fast. Ours isn’t. We lower proof slowly, one drop at a time, using a hands-on process called slow-water reduction. It takes longer and limits how much we can make—but it leaves more flavor, texture, and balance in the glass. The result is a bold, Bottled-in-Bond bourbon with a surprisingly soft, velvet finish at 100 proof. Nothing rushed tastes this complete.
